This is a two part question for people who have the mod tools currently.

Question 1: I have seen a few videos now of people making weapon mods for The Giant. Are you also able to do GSC scripting mods for The Giant?

Question 2: If question 1 is yes, are you also able to do scripting mods for all the other Treyarch maps?

not sure yet, we dont have very much zombie gsc at all atm, we have the source to the giant so im guessing thats how they have done it so far, but im not a scripter so idk

No you cannot edit existing maps, however you might be able to create a general zombies mod and play it on them.
The only reason people have custom stuff on the giant is it is one of the maps given to the testers to use (along with combine from mp) - though its a gimped version of the map that is missing a lot of the original stuff from the giant.

WaW Mapping is a lot more complex than mapping on Hammer... So that's why I map on Hammer. I like to go for High Round attempts but I usually choke or do something stupid.

they are not unused, they are just the outside of the maps which have been detailed so keep up the maps asthetic
