Is there a way to make a clip only work for one way so you can go through the clip like if you walk south but you can't when you walk via the north?

YES, make a patch and put it vertical then any type of clip on the blocking side.
Face to terrain on a brush surface is also a quick way to get the patch in shape, works great for catwalks or loading bays, like you can jump off the ledge but just to ensure there is no way back make the clip outwards so there could be no trickery or boosting etc
